This is how you transmit the hereditary character of the territory and the harmony of the men that search for excellence on a daily basis.
Winemaking
Espalier, with Guyot pruning. 550/600 metres above sea level. Planting density of 5500 plants per hectare. Harvest in August. Fermentation 1000% in steel. Foaming 2 months in autoclave.
Fermentation in steel. Ageing in steel, six months in bottle.
Tasting notes
It has a pale straw yellow colour, with herbaceous and vegetal aromas of green pepper, tomato leaf and mown grass. Intense fruity notes that evoke exotic fruits such as pineapple and banana, and floral notes reminiscent of elder, broom and hawthorn.
Food pairing
Perfect on its own as aperitif, or great paired to fish dishes, sushi and sashimi, oysters, white meats and risotto.
