At 800 meters above sea level, on the gentle hills that were once the seabed of the Mediterranean and under the shelter of the Sierra del Negrete (Utiel), a unique landscape opens up to the eye. An environment where pines, holm oaks and olive trees join the aromatic notes of thyme, rosemary and fennel that dot the valley and combine to wrap the fruit of the vineyards of the Sarrión-Martínez family, la Bobal. A strong grape that, withstanding extreme climates and apparently infertile limestone soils, cultivated through natural and pioneering processes in the area, offers a fruit full of nuances, elegant and delicate. A grape expression of the soil, the climate, the aromas of the mountains and the proximity of the sea that, together, give the wine its unique Mediterranean character.
Winemaking
Mediterranean mountain vineyard, at an altitude of 900 m. At the Calvestra estate, Requena. Merseguera grafted on old Bobal vines. Vineyards on limestone soil with a loamy-sandy texture. Conduction in glass in strict dry land with tillage. Manual harvest in boxes of 15 kg. Cluster selection table, destemming and light crushing. Soft pressing and only the flower must is chosen. Fermentation in 225 l barrels with native yeast. Aged for 11 months on fine lees in 225 l acacia Bordeaux barrels. Bottled between July and September. No stabilization or filtering treatments.
Tasting notes
Creamy, elegant and fresh wine. In this vintage the freshness is surprising, floral and mineral notes predominate on the nose. Agile and long in the mouth.

It pairs perfectly with appetizers, white, smoked or marinated meats, salads, shellfish, shell molluscs, fish, pasta, spectacular with stews and seafood rice dishes.
