Hacienda Solano is a small, family-run winery located in La Aguilera, a historic town in the province of Burgos, home to some of the best DO Ribera del Duero vineyards. Here, at an altitude of around 1,000 metres and in extreme climatic conditions, the winery cultivates its old vineyards, some of which are centuries old, in small plots that do not allow for mechanisation.The technical part of wine production is led by Sophie Khün, an Alsatian oenologist with a long professional career in France and Australia, and Toni Sarrión (from Bodegas Mustiguillo in Utiel), who joined the project in 2016 to offer a more environmentally friendly concept, with minimal intervention in both the field and the winery. Even without official certification, the winery follows the principles of organic farming and its aim is to produce wines that speak of terroirs, classified according to the age of the vineyards and the soil characteristics of each estate.This is definitely a winery that naturally introduces us to Ribera del Duero, offering us lighter, more delicate, fresh, elegant and long-lasting wines.

About the wine

Finca Cascorrales is one of Hacienda Solano’s table wines, and it comes from an estate of the same name with centuries-old vines planted on gravel soils, more clayey than those of Peña Lobera. These soils give birth to wines with more fullness and structure, of which barely a thousand bottles are made. One of the most exclusive red wines of the Cubillo and Toni Sarrión family, born in one of the most popular areas of Ribera del Duero today.

Winemaking

Selected vines over 100 years old from a place called Cascorrales. The soil consists of pebbles and clay. Vinification in an open 500-litre barrel. Maceration takes a long time and little juice comes out of the grapes, the process is hand-crafted. Aging for 15 months in French oak and 4 months in concrete tanks.

Tasting notes

The colour is an intense cherry red with a pomegranate undertone. On the nose, the wine is clean, showing black fruit (blackberries and blueberries), aromas of bushes and spices such as cloves. On the palate it is dry, structured, voluminous, with fleshy tannins and persistence.

Food pairing

Suitable for game, good steaks, gelatinous meats like cheeks or tripe, very aged cheeses and various stews.
