Faune is an elegant white wine produced by Moulin de Gassac, part of the renowned Mas de Daumas Gassac estate located in the Languedoc region of southern France.
This wine falls under the IGP Pays d’Hérault classification and reflects the distinctive character of the Mediterranean terroir.

🍇 Grape Varieties & Terroir

Faune is made from a blend of 60% Chardonnay and 40% Viognier grapes, grown on clay-limestone soils with quartz gravel on slopes near the Thau Lagoon.
The Mediterranean climate, characterised by low rainfall and high temperatures, offers ideal conditions for ripening, allowing the varieties to fully express their aromatic potential.

🛠️ Vinification & Ageing

The winemaking process involves complete de-stemming, followed by slow cold maceration with the skins for 10–12 hours in chilled tanks.
Fermentation is conducted at controlled temperatures to preserve freshness and aromatic complexity.
The wine is then matured for 4–5 months in stainless steel tanks, maintaining its youthful and vibrant character.
