The Perez Barquero winery, founded in 1905, is one of the leading wine producers in the Montilla-Moriles region. Specializing in traditional Spanish wines such as Fino, Amontillado, Oloroso, and Pedro Ximénez, it uses unique aging methods like fermentation under a “flor” yeast film and traditional American oak barrels, which give the wines distinctive depth and aroma. Perez Barquero wines receive high ratings on the international stage, making them an excellent choice for connoisseurs of quality Spanish wines.
Production Process
Type: Dry / Fino.
Variety and origin: 100% pedro ximénez from the best “albariza” vineyards of the
“Sierra de Montilla” and “Moriles Altos”.
Production: Selection of “yema” (free running) must, natural fermentation at
controlled temperature without adding any alcohol.
Ageing: Biological aging under a film of “flor” (yeast). Criaderas & Solera system, for
10 years, in American oak casks.
Tasting Notes
Appearance: Pale. Bright. Crystalline.
Aroma: Pungent. Intense. Harmonic. Rich in aldehydes. Wood and nuts.
Taste: Dry. Slightly bitter. Dried fruit (almond) and roasted flavours. Intense
aftertaste and retro nasality. Food pairing. Salted fish, cold soups, seafood, fried fish, Iberian
ham.Serve at 8-10 ºC, always in a wine glass.
