About the wine

This Amarone is a wine of ancient origin. This is a limited edition dedicated by Nicola Fabiano to his grandfather Francesco and father Sergio. They have been an inspiration and a good role model for their children and especially for him (Nicola) with their passion and perseverance in making quality wines. Produced from a careful selection of the above grapes from high hill vineyards in the classic area of the Valpolicella DOC, in particular around the ancient village of Negrari. The grapes are picked by hand to allow a more careful and precise selection of grapes in the vineyard. Following the traditional Valpolicella method, the grapes are left to dry in ventilated rooms for around 120 days. Soft pressing of dried grapes with a wine yield of 36%.

Vinification

Fermentation usually starts in the second week of February and lasts about 60 days, including 30 days of maceration. Controlled temperature during fermentation around 14-15° C. Aging takes place for a minimum of 30 months in large barrels and then around 6 months in the bottle before being released on the market.

Tasting notes

The palate is dry and pleasant, with a distinctive perfume and a deep garnet red color resulting from drying followed by long aging and finishing. Open and decant the wine some time before serving.

Food pairing

Excellent with grilled and roasted meats. Can also be enjoyed at the end of a meal as a “meditation wine”.
