Moillard, historically based in Nuits-Saint-Georges, in the Côte de Nuits, offers Domaine wines (Côte de Nuits and Côte de Beaune) and a traditional signature of Burgundy wines. The old documents of Nuits-Saint-Georges attest that the Moillard family already owned vineyards before the French Revolution. But the Winery saw a real boom in 1850, when Symphorien Moillard bought his first wines to satisfy an order too important for his own Domain, thus initiating his activity of wine trading. Since then, Moillard has carried out the meticulous job of wine making and aging to bring all their wines to their full potential.
Winemaking
Traditional vinification in temperature-controlled vats. Cold pre-fermentation maceration for around ten days, with a long vatting period. Post-fermentation maceration at 30°C for 5 days. Aged in oak barrels for 10 to 12 months, 30% of which are new.
Tasting notes
A garnet-red colour with lively highlights. Strength and elegance combine to produce a great Burgundy wine: fine aromas with notes of faded rose, red berries and cigar box. The palate is structured, straightforward and precise, with fine, persistent tannins on the finish and a very fine aromatic complexity.
Food pairing
Perfect with poultry, roast, braised or glazed game birds, couscous, tajines and medium-strength cheeses: Camembert, Saint Paulin, Morbier, Reblochon…
