Moillard, historically based in Nuits-Saint-Georges, in the Côte de Nuits, offers Domaine wines (Côte de Nuits and Côte de Beaune) and a traditional signature of Burgundy wines. The old documents of Nuits-Saint-Georges attest that the Moillard family already owned vineyards before the French Revolution. But the Winery saw a real boom in 1850, when Symphorien Moillard bought his first wines to satisfy an order too important for his own Domain, thus initiating his activity of wine trading. Since then, Moillard has carried out the meticulous job of wine making and aging to bring all their wines to their full potential.
Winemaking
This balanced white wine from France is made from the Chardonnay grape variety. The grapes grow in optimal conditions in Burgundy. The vines here dig their roots deep into soils of limestone and slate. The grapes for this white wine from France, when perfectly ripe, are harvested particularly quickly and preferably in the morning to preserve their freshness. After the harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully crushed. This is followed by fermentation in large wood at controlled temperatures. After the end of fermentation, the elegant Chardonnay Bourgogne is aged for several months in French oak barrels.

On the palate, Domaine Moillard’s Chardonnay Bourgogne opens pleasantly aromatic, fruit-driven and balanced. Balanced and multifaceted, this light and melting white wine presents itself on the palate. On the finish, this youthful wine from the Burgundy wine-growing region finally delights with good length. Once again, hints of acacia and peach appear. In the aftertaste, mineral notes of the soils dominated by slate and limestone join in.
Food pairing
This French white wine is best enjoyed well chilled at 8 – 10°C. It is perfect as an accompanying wine to coconut-lime fish curry, fruity endive salad or omelet with salmon and fennel.
