Mario Palacios is a young winemaker who combines his studies in oenology with the self-taught nature that defines him. An entrepreneur and dreamer, he has been involved for years in a unique and special project that has transformed his lifestyle, producing wines with soul and always committed to sustainable agriculture. Montemundo comes directly from its roots in the heart of the Sierra del Segura Albaceteña, where its mountainous terrain stands out, accompanied by the course of the Mundo River. It is an area he cannot detach himself from due to its human warmth and beautiful landscape.

Winemaking

Certified organic vineyard, over 25 years old and located at 1,000 metres above sea level. The focus is on sustainable agriculture and quality through low yields.

The wine is made using the carbonic maceration technique. In southern Spain, this method is rare, especially with this grape variety. It allows the production of young wines with high aromatic intensity and a fun, drinkable character. Fermentation was carried out at around 28 °C with whole bunches in contact for 8–9 days, followed by alcoholic fermentation at a controlled temperature of 20 °C in stainless steel.

Tasting notes

The colour is deep purplish red, typical of Garnacha Tintorera. On the nose, it’s intensely aromatic with notes of strawberry yoghurt, raspberry, cherry, and a banana background—hallmarks of carbonic maceration. On the palate, it’s fruity, sweet, fresh and balanced, with medium persistence and easy drinkability. Compared to other carbonic maceration wines, this one has a longer life due to its alcohol level and the natural acidity of high-altitude vineyards.

Food pairing

Perfect to pair with rice dishes, meats, game and aged cheeses. Serve at 13 °C.
