The origin of all things. The soul of the company. Barbadillo is the south and the sea. It is Cádiz and it is the west wind. It is Sanlúcar and it is tradition. It’s a century-old winery, and it’s the future. Its history dates back to 1821. to the year when manzanilla began to be produced. Since then, Barbadillo has not stopped developing, always looking for wines that surprise and leave their mark.
Winemaking
Our century-old soleras give an exceptional age to the Jerez wine range. More demanding tastes agree: finesse in its purest form.
Palo Cortado is one of the most special wines of the Jerez-Xérès-Sherry designation of origin. This is because, although its production process is a physico-chemical oxidative aging process like that of Oloroso, the result is not Oloroso, but its organoleptic characteristics place it between Amontillado and Oloroso.
We can say that our Palo Cortado Obispo Gascón lies between these two techniques, biological and oxidative aging.
Tasting notes
Old golden color. Its aromatic nuances give us roasted almonds, walnuts and raisins. In the mouth it is friendly and balanced. It is soft and has a long aftertaste.
Food pairing
Dishes with fresh tomato, chicken Teriyaki.
