Among the first Traditional Methods from Lambrusco Grasparossa grapes, Settimocielo originates in Puianello, at over 425 meters above sea level, from the highest vineyard in the municipality of Castelvetro di Modena: an authentic single vineyard in the high hills with over twenty years of age. The exposure to the Northeast and the excellent excursion between day and night, together with the composition of the land, give perfect grapes to make a classic method sparkling wine of great expressiveness.
After 24 months of resting on the lees it is able to combine intense fruity notes of sour cherries and small fruits which then leave room for delicate floral touches and incisive citrus nuances with a fine and persistent perlage. On the palate acidity and flavor come together in a balanced and dynamic sip, thanks to the presence of enveloping and lively bubbles.
Intense and bright pink color with shades reminiscent of cherry. On the nose, fruity notes of sour cherries and small fruits that then leave room for delicate floral touches and incisive citrus nuances. An enveloping and lively perlage makes the sip dynamic in balance between acidity and flavor.

It lends itself perfectly to being combined with any meal: it goes well with traditional Emilian dishes but also becomes a pleasant discovery in combination with a more contemporary and creative cuisine.
