St. Patrick's Distillery |
The goal of St. Patrick’s Distillery is to produce spirits with character, flavour, and individuality. Most modern strong spirits are made from grain because it contains a high amount of easily fermentable sugars. Instead, the distillery has chosen potato as the alcohol base for its vodkas and gins, thanks to its unique natural sweetness and remarkable versatility. Since potatoes contain only about 20% starch in dry matter, the process becomes much more expensive, but the extra time and labour are more than compensated by the distinctive flavour, aroma, and smoother mouthfeel. The company sources both New Make and Mature whiskeys from various Irish distilleries and ages them in carefully selected oak casks in its own warehouse until they are ready for blending and bottling. This rare flexibility allows them to patiently curate, mature, and craft their own signature whiskeys. All their whiskeys begin ageing in first‑fill bourbon barrels and are then finished in port, sherry, rum, or cognac casks.

Triple Distilled in Ireland from 100% malted barley, matured in American Oak Bourbon barrels and finished in French Oak Cognac casks.
Non-chill filtered.
