After the grapes have been carefully selected, they are carefully pressed to obtain only 60% “mosto fiore” (the purest must). Fermentation takes place in stainless steel tanks at a controlled temperature of 17-18 °C for 12-14 days. The temperature is then lowered to 6 °C. This makes it easier for the wine to clarify. Aging in stainless steel tanks, not in wood.
