Winemaking

“Aristocratico” Appassimento is a semi-dry red wine made from two grape varieties – Primitivo and Negroamaro. The vineyards are located in southern Italy, in the Salento region. Harvesting is carried out by hand in the first week of October. Fermentation takes place in stainless steel tanks at a controlled temperature. “Aristocratico” Appassimento perfectly complements spicy dishes and makes an excellent match for grilled or roasted red meats.

Tasting notes

The wine shows a deep ruby-red colour. Its complex aroma is filled with tones of ripe dark fruits, herbs and spices. On the palate, it is generous, rich and perfectly balanced, with a velvety texture, ripe fruit notes and hints of tobacco in a spicy aftertaste. It pairs wonderfully with spicy dishes and grilled or roasted red meat.
