The origin of Barbadillo lies in the south of Spain, shaped by the sea, the light of Cádiz, and the cool poniente winds. Since 1821, when the winery in Sanlúcar de Barrameda began producing manzanilla, Barbadillo has continually evolved, crafting distinctive wines born from the remarkable albariza soils and the expertise of its winemakers. These wines embody the region’s traditions, the legacy of a centuries‑old family bodega, and a forward‑looking spirit of innovation that defines the essence of the South
Cuco Oloroso VORS is one of Barbadillo’s most precious wines, sourced from the winery’s oldest criaderas. These are true oenological jewels, evaluated and certified by an expert committee before being granted the V.O.R.S. designation. The concept of “Vinum optimun rare signatum” refers to wines that reach the market only in extremely limited quantities after spending decades maturing in the silence of the cellars.
This Oloroso is made from Palomino Fina grapes grown on albariza soils. It is aged for more than 30 years in old American oak casks, which give it a deep dark mahogany colour. The nose is complex, with notes of seasoned wood, walnut, spices, caramel and cocoa. On the palate it is full‑bodied, balanced and exceptionally long. It is a very old, dry sherry originating from Barbadillo’s foundational oloroso criaderas.
Food pairing
Traditional: gilt‑head bream (dorada). Innovative: cannelloni.
Serving temperature: 16–18 °C.
