The Aÿ terroir is located near Epernay, on a beautiful hillside at the foot of the Reims mountain, listed as a UNESCO World Heritage Site.
EMPYREUMATIC BRUT — GRAND CRU 2015 Our 2015 vintage fully delivers on its promise of originality, making it the ideal companion for dishes built primarily around umami (the fifth taste: deep, rich, and intensely savoury).
Racy, powerful, spicy, with toasted aromas — we call it exactly what it is: Empyreumatic – This wine term describes aromas created by heat or roasting: coffee, caramel, toasted nuts, bread crust, tobacco, smoky nuances. These notes often develop through oak ageing and extended lees contact. Let yourself be carried into its world and discover its many facets!
Winemaking
Alcoholic and malolactic fermentations take place in temperature‑controlled stainless steel vats. 50% of the base wines are aged in a 10‑hl cask. 50% are matured in Burgundy barrels (used for 2–3 wines) as well as in new American oak barrels (228 L). Dosage: 6 g/L, Pinot Noir base matured in American oak. Aging: at least 96 months in bottle.
Tasting notes
Appearance: golden hue with subtle amber reflections. Beautiful, dynamic bead of bubbles. Nose: highly expressive first nose with notes of mocha, hazelnut, grilled almonds, and blond tobacco. With aeration, hints of menthol and cedar emerge. Palate: airy and layered, showing aromas of passion fruit and almond cream, enhanced by delicate vanilla notes. The fresh finish offers impressive length with a touch of lemongrass.
