Maison Collery, founded in 1893 in the heart of the Art Nouveau era, has been shaped by generations devoted to crafting exceptional champagne. From the innovative spirit of Jules‑Anatole Collery to the vision of Pierre, Geneviève, Jean, and Alain Collery, the history of the House is a blend of tradition and bold innovation. Remaining true to its historic home in Aÿ, Collery focuses on the finest Grand Cru Pinot Noir grapes and aims to make every champagne tasting an extraordinary and memorable experience. The Aÿ terroir is located near Epernay, on a beautiful hillside at the foot of the Reims mountain, listed as a UNESCO World Heritage Site.
NV Rosé Grand Cru is a blended rosé whose structure is built on the framework of Pinot Noir, elegantly balanced by Chardonnay. Its generous proportion of red wine (89% Pinot Noir, including 15% red wine) and its well‑judged dosage make this champagne suitable for any season — both as an aperitif and alongside food.
Winemaking
Alcoholic and malolactic fermentations take place in temperature‑controlled stainless steel vats. The red wine is fermented in Burgundy barrels. 20% of the blend is aged in 40‑hl casks. Dosage: 5 g/L — 50% of the dosage base is Chardonnay aged in Sauternes Grand Cru barrels — 50% of the dosage base is Pinot Noir aged in Burgundy casks (used for three wines) Aging: at least 36 months in bottle.
Tasting notes
Appearance: coral‑pink hue with bright copper reflections. A steady, fine effervescence. Nose: direct, open and well‑structured, offering notes of rose, raspberry liqueur and rhubarb. With aeration, nuances of blood orange and lemon emerge. Palate: pure and flavourful attack, revealing aromas of stone fruits (morello cherry, mirabelle) and citrus (orange). The tangy structure supports the cuvée beautifully, with a finish marked by the pleasant bitterness of pink grapefruit.
