The ‘’Domaine Laurent Dufouleur’’ was born in Mercurey, in the heart of Burgundy, originated from the desire of a passionate winemaker to express his pride for his name recognized within the region, as well as for a powerful soil, synonymous with quality and demand. Created in 2016, the Domain is the fruit of a rich history and is susceptible to today’s demands, especially towards sustainable development (level 3 HVE certification). Today, it comprises 17 hectares exploited with a specific knowledge of what makes the quality and the particularity of the Côte Chalonnaise subregion.

Winemaking

This climat is located under ‘’Le Meix Frappé’’. ‘’Maille’’ means ‘’marl’’ in Old French, which is a characteristic feature of this climat. The vineyard is managed with the use of sustainable growing techniques for treatments, and is HVE (High Environmental Quality) certified. Soil composed of weakly calcareous white marls, conducive to the cultivation of vines. The grapes are harvested in September, generally in fully ripe. After pressing, the wort is put into stainless steel vats, where fermentation will last 10 days around. Once fermentation is over, wine is matured in French oak barrels before bottling.

Tasting notes

Wine with pale yellow appearance. We can find floral notes developed in the nose, like acacia, and dry fruits notes, like grilled almond. This is a full-bodied wine on the palate, with a long finish.

Food pairing

This Mercurey goes well with scallops, trout with almonds, fish blanquette or noble shellfish.
