Fondo Antico is a family‑run winery in the Trapani area, built on deep respect for Sicilian land and the century‑long winemaking heritage of the Polizzotti‑Scuderi family. Across 80 hectares of vineyards in Contrada Portelli, tradition blends with innovation, resulting in wines that capture the strength, generosity and distinctive character of Sicily.

Its bouquet blends the delicacy of flowers with the sweetness of white fruits, giving voice to the Grillo Parlante (“talking cricket”, a nod to Pinocchio’s Jiminy Cricket) and revealing the distinctive flavours of the Grillo grape.

Winemaking

Altitude: 50 m above sea level
Harvest period: late August to mid‑September
Winemaking: grape chilling and cryomaceration in an oxygen‑free environment; soft pressing, must settling and fermentation in stainless steel at controlled temperature
Aging: about four months on the lees (“sur lies”), with periodic pump‑overs to resuspend the lees, enhancing shelf life and adding pleasant richness to the palate

Tasting notes

Color: bright yellow with greenish nuances
Nose: typical thiol‑derived varietal aromas — exotic fruit, lychee, yellow peach, passion fruit; complemented by terpene notes of white flowers and citrus
Palate: rich and fruity, balanced by the saltiness imparted by the marine‑origin soils (carbonates and limestone)

Food pairings
