Bodega Mastinell is a winery dedicated to crafting long‑aged cavas and organic wines, blending innovation with deep respect for the winemaking heritage of Penedès. Founded in 1980 in a privileged setting sheltered by the Sant Pau mountain, it has grown from a small family project into one of the ten most prestigious cava producers in Penedès, holding the distinguished Elaborador Integral certification, which ensures that every stage of cava production takes place entirely on the estate. Its philosophy centers on love for the land, organic viticulture, hand harvesting, and meticulous selection, working with emblematic local varieties such as Xarel·lo, Macabeo, Parellada, Trepat, Malvasía de Sitges and Sumoll, alongside Chardonnay. With cutting‑edge technology, strict quality control and long ageing —Reserva and Gran Reserva— Mastinell has earned numerous international awards and a presence in top restaurants worldwide.
Winemaking
When the harvest of all white and red varieties is finished and the first signs of autumn begin to appear, the perfect moment arrives to pick the small organic Muscat crop from the upper terrace (bancal de dalt). The harvest is done by hand. Each cluster, slightly dried to a raisin-like state, is picked calmly and carefully, because the sugar in the berries has naturally concentrated without losing freshness. The pressing is gentle, and after the must naturally clarifies, spontaneous fermentation begins. When the alcohol content reaches 12 degrees, the must is cooled so that the yeast can rest after its excellent work.
Tasting notes
Bright yellow colour with greenish hues and pronounced tears. The late harvest gives the wine aromatic concentration and complexity. The nose is delicate, intense and fresh, with citrus notes, orange peel and white truffle. On the palate it is an elegant sweet wine: fresh, flavourful and long. White fruit dominates, with light touches of fennel and lemon verbena that refresh the palate.
Food pairing
Ideal as an aperitif, with blue cheese and foie gras. Also excellent with creamy desserts, citrus sorbets or fresh fruit salad.
