Guardians of the heritage and know-how of their ancestors for 3 generations, Champagne Yves Jacques run the family vineyard planted with the three Champagne grape varieties in the Marne Valley, the Cote des Blancs and the Aube, in the communes of Sézanne, Baye, but also Chouilly and Ay, classified as Grand Cru. Their Champagne wines are made in Baye, in their own cellars and in accordance with the traditional method.

MCM in roman numerals means 1900 so the cuvée’s name is 1982, the year of return of Rémi after his oenologist studies in Bordeaux where he learned to master red winemaking. He has applied his knowledge. Thus, the Pinot Noirs planted on clay soils in Passy-Grigny make it possible to obtain structured red wines with delicious aromas of red fruits such as blackcurrant and Morello cherry. It is also present in this blend vinified in white with Meunier and Chardonnay. The result is a light and fresh Champagne to be enjoyed during moments of relaxation and pleasure.
Winemaking
Picking 100% by hand with rigourous sorting. Maceration with daily pumping over for 10 days. Alcoholic and malolactic fermentation at low temperature in stainless steel tanks. Ageing on lees before bottling for 3 months, ageing on laths minimum 24 months.
