At 800 meters above sea level, on the gentle hills that were once the seabed of the Mediterranean and under the shelter of the Sierra del Negrete (Utiel), a unique landscape opens up to the eye. An environment where pines, holm oaks and olive trees join the aromatic notes of thyme, rosemary and fennel that dot the valley and combine to wrap the fruit of the vineyards of the Sarrión-Martínez family, la Bobal. A strong grape that, withstanding extreme climates and apparently infertile limestone soils, cultivated through natural and pioneering processes in the area, offers a fruit full of nuances, elegant and delicate. A grape expression of the soil, the climate, the aromas of the mountains and the proximity of the sea that, together, give the wine its unique Mediterranean character.
Calvestra farm at 900 m altitude. Limestone soil with loamy-clay texture. Own vineyards in goblet and on trellises in strict dry land with tillage. Maximum respect for the environment. Manual harvest in boxes of 15 kg. Average yield of 0.9 kg/m2 of leaf surface, average yield per hectare 6000 kg. Each variety and/or plot is vinified separately. Cluster selection table, destemming and light crushing. Cold maceration, above 6°C, from 4 to 8 hours depending on the plot and variety. Stainless steel vinification tanks with temperature control from 25 Hl to 50 Hl. Alcoholic fermentation between 10 and 16° with native yeast. Aged on fine lees in stainless steel tanks. Bottled in March-April.
Bright yellow colour. Aroma of a medium-high intensity, floral, citrus and sweet touches like honey. Clean, tasty, silky on the palate, with a lot of fruit, a slight sweet touch provided by the Malvasia. Good acidity.
It pairs perfectly with appetizers, white, smoked or marinated meats, salads, shellfish, shell molluscs, fish, pasta, spectacular with stews and seafood rice dishes.
