Mario Palacios is a young winemaker who combines his studies in oenology with the self-taught nature that defines him. An entrepreneur and dreamer, he has been involved for years in a unique and special project that has transformed his lifestyle, producing wines with soul and always committed to sustainable agriculture. Montemundo comes directly from its roots in the heart of the Sierra del Segura Albaceteña, where its mountainous terrain stands out, accompanied by the course of the Mundo River. It is an area he cannot detach himself from due to its human warmth and beautiful landscape.

Winemaking

Organically cultivated vineyard, focused on sustainable agriculture and low yields to achieve high quality.

This wine is made from the Verdejo grape variety. The harvest is carried out at night or early in the morning, ensuring that the grapes arrive at the winery as cool as possible. By avoiding light and high temperatures, the must is protected from oxidation. Fermentation takes place at around 13 °C, enhancing the development of aromas and extending the fermentation period to 25 days. After fermentation, the wine is aged on its lees for three months, with weekly stirring to achieve a silkier, more structured wine and a longer finish.

Tasting notes

Pale yellow in colour with greenish hues. Aromas of pineapple, mango and peach, with a hint of anise. On the palate, it is fresh, fruity, balanced and easy to drink, with a pleasant acidity.

Food pairing

Ideal with rice dishes, seafood and fish. Serve at 7 °C.
