Bodega César Florido was founded in 1887 and is currently maintained by César Florido, a fifth generation descendant of the founder. The winery is the oldest wine cellar in Chipiona, located about eight kilometers from Sanlúcar de Barrameda on the road leading to Rota. César Florido is one of only two wine cellars in Chipiona that still operate outside of the cooperative. While technically outside the D.O.’s Zona de Crianza, Chipiona produces some of the area’s most unusual wines, which are what true César fans are looking for.
After passing through 5 criaderas, César Florido tastes the entire Solera, selecting for the bag, the boot that is considered unique, for its subsequent bottling, without clarification treatments and without filters, the 450 liters or 1,200 ½ bottles. Therefore it is a unique wine of 1 single boot / batch. It can be saved and stored, since in the bottle it perfectly maintains its organoleptic qualities.
Pale gold in color with gold trim. Sharp and delicate aroma. It has an extraordinary passage through the mouth, with excellent aromatic aspects with memories of old wood. The palate is light and smooth, somewhat warm, tasty and long, with a brackish touch and a pleasant chamomile flavor due to the proximity of the soleras next to the Atlantic Ocean.
Serving temperature: 10 – 12°C.
Ideal wine for the aperitif and for all kinds of tapas, especially olives, nuts and Iberian ham. Ideal companion for seafood and fish, especially those with a marked salty flavor (anchovies) and raw (sashimi). Due to its low content of acetic acid, it combines exceptionally with dishes of outstanding acidity (salads with vinaigrette, marinades, etc.) as well as cold soups (gazpacho, white garlic …). It is widely used in haute cuisine to marinate and flavor numerous dishes, to which it adds a multitude of nuances, making them happy and giving it a unique and personal touch.
