To preserve the aromas and their best qualities, It is realized a night harvest of a selection of varieties. The grapes are refrigerated with dry ice during the transport to the winery to keep all their fruity aromas. Then a soft squeezed is performed, carrying out the peculiar maceration at low temperature to extract the maximum of primary aromas. The bleeding is produced through extraction by gravity and then controlled temperature and using selected yeast.
Tasting notes
Crystalline, clean and pale yellow color. It has aromas of white flowers such as jasmine or orange blossom with nuances of white fruits such as pear or pineapple. In the mouth it is fresh and with volume. It has a long aftertaste with citric notes.
