At the Allacher winery, the indispensable knowledge of tradition are combined with the modern insights of the next generation. What grows from this are great wines. The vineyards are located on about 30 hectares of the unique wine-growing region of Neusiedlersee, including the legendary vineyards Altenberg and Salzberg. The soil gives the potential. The winery provides natural, attentive care. Fresh fruity white wines, powerful dense red wines and extract-rich sweet wines are the precious result. Here happiness and glass find each other.
Winemaking
The grapes were harvested by hand and sorted immediately. Only ripe and healthy grapes were processed further. The Zweigelt grapes were crushed and filled into a stainless steel mash tank. After 2 days of maceration the fermentation started. The mash was submerged 4-6 times a day. This leaches more colour and tannin from the grape skins. The fermentation lasted 8 days. After fermentation, the wine remained on the mash for another 6 days. Afterwards, the Zweigelt was pressed and the biological acid reduction was initiated. Here, lactic acid bacteria convert the harsh malic acid into milder lactic acid. The wine was aged 80% in stainless steel tanks and 20% in used barriques. Before bottling in April, the wine was drawn together again.
Tasting notes
Zweigelt with protected designation of origin Neusiedlersee DAC. Only very typical, fruity and full-bodied wines from the Neusiedlersee wine-growing region may be bottled as Neusiedlersee DAC. Deep dark ruby, opaque core, violet reflections, ripe cherry fruit with black berry fruit underneath, powerful, sturdy, chocolaty texture, ripe plums, lingers, a good food companion with ripe potential!Recommended serving temperature: 16° — 18°C
