Traditional production, combined with good and excellent raw materials and the realisation of a vinification differentiated by varietal and parcel, allows Pagos de Araiz to create complex and balanced wines. They are based on cultural tradition, the wisdom of ancestors and the knowledge that comes from this land. They create in the present, without forgetting their roots, taking advantage of every past experience to innovate every day, always looking for their best version.
Making wine
The vineyard from which this wine originates is known as “Chardonnay Chamaco”. It is a vineyard with a very limited production due to the poor slope of the land. This gives the grapes a special concentration.Harvest by hand to preserve the freshness of the grapes. The grapes go into the press after being weeded. The wort undergoes natural settling in a steel vat and the next day is transferred to new 500-litre French oak casks for alcoholic fermentation. This lasts 25 days, after which it is matured in racks and matured again in the same barrels with the sediment, using the usual barrel aging method, for 7 months. After gentle clarification, it is bottled.
Tasting notes
A straw yellow colour with light golden tones. Clean and attractive. The nose has floral notes, citrus, light toasted notes that give it an aromatic complexity. Intense and fragrant. A fruity ripeness with an acidity that prolongs it in the mouth. The finish is reminiscent of yellow fruit, with a white floral aroma and a long sweet body. This is a white Chardonnay that will make you fall in love with its freshness, leave you wanting more and invite you to enjoy it to the full.Recommended serving temperature: 8°C.
