At the Allacher winery, the indispensable knowledge of tradition are combined with the modern insights of the next generation. What grows from this are great wines. The vineyards are located on about 30 hectares of the unique wine-growing region of Neusiedlersee, including the legendary vineyards Altenberg and Salzberg. The soil gives the potential. The winery provides natural, attentive care. Fresh fruity white wines, powerful dense red wines and extract-rich sweet wines are the precious result. Here happiness and glass find each other.

Winemaking

The grapes were harvested by hand and selected immediately during the harvest. Only very ripe and healthy grapes of the best quality were processed further. The grapes of the Blaufränkisch variety were crushed and filled into a stainless steel mash tank. After a cold maceration of 24 hours, the yeast was added and fermentation started. The mash was submerged 6-8 times a day. This makes the wine very full-bodied, extract-rich, spicy, rich, very dark and intense in flavour. The fermentation lasted 14 days. After fermentation, the wine remained on the skins for another 8 days. After two days of settling, the wine was put into new barriques and the acid reduction started. Here, lactic acid bacteria convert the harsh malic acid into milder lactic acid and reduce the overall acidity. This makes the wine much milder and smoother. After 10 weeks, the malolactic fermentation was finished and the wine was drawn off and aerated. After filtration, the barriques were filled again. After a maturation period of 12 months in the new barriques, the Blaufränkisch from the Salzberg vineyard was bottled.

Blaufränkisch from the Salzberg vineyard. A wine that we only vinify in particularly good vintages.Strong ruby garnet with dark core, violet reflections. Noble roasting, blackberries and ripe currants, enormous density, perfect harmony, dark berries and chocolate, noble tannin quality, despite pressure and fullness elegant and long finish, enormous potential.Recommended serving temperature: 16° — 18°C
