Domaine Laurent Dufouleur is a modern Burgundy estate in Mercurey, built on more than 400 years of family winemaking heritage. The domaine cultivates 17 hectares, including 5 premiers crus, and focuses on sustainable viticulture certified HVE level 3. With precise plot‑by‑plot vinification and deep respect for the Côte Chalonnaise terroir, the estate produces elegant, expressive wines crafted with passion, tradition, and environmental responsibility.

Winemaking

Grapes are harvested fully ripe, generally in September. After destemming, the berries are placed into stainless‑steel vats. Fermentation lasts about 10 days and is controlled through a water‑belt system regulating each vat’s temperature. Manual punching‑down is performed once a day. When fermentation is complete, the wine is aged in French oak barrels for around 8 months before bottling.

Tasting notes

With a lovely ruby colour, this wine offers red‑fruit aromas such as strawberry and blackcurrant. On the palate it is full‑bodied and well‑structured. Serving temperature: Between 14 and 16°C Aging potential: 6 years.

Andouillette, fondue bourguignonne, meat pie, Camembert and Emmental cheeses.
