This is how you transmit the hereditary character of the territory and the harmony of the men that search for excellence on a daily basis.
About the grape variety
The Grillo grape variety is one of the oldest in Sicily. It is perhaps the one that best evokes its aromas and richness of sensations. Tasting it is like ‘taking a leap’ into the region.
Winemaking
Espalier, with Guyot training. 150/450 metres above sea level. Planting density from 4500 to 5500 plants per hectare. Harvest at the end of August.
Fermentation and ageing 20% in barrique, 80% in steel. Maturation three months in bottle.
Tasting notes
It is a fairly savoury wine, as some of the grapes come from vineyards adjacent to the sea coast off the island of Mozia. These characteristics make it an evocative wine that encompasses all the Sicilianity of the sea, summer breezes and citrus fruits of Sicily.
Food pairing
It goes perfectly with fish, shellfish and crustaceans, fresh cheeses, cold meats, eggs and risottos, pasta with light sauces, chicken, fresh pasta. Excellent as an aperitif. Serving temperature 12-15°C.
