Vinification
The traditional winemaking process, the wine is matured in new French acacia barrels of 500 lts, light toast for a 6 months period, allowing the wine to develop its character, followed by bottling and a minimum rest period of 6 months before going to market.
Degustation notes
Deep straw-yellow color. Very complex nose, intense fruity scents reminiscent of pear, peach, followed by floral hints of acacia, orange blossom and honey. Overall it is very reminiscent of a cross between the finest Sancerre and Riesling. Dry and complex taste, pleasingly fresh and very persistent. Serving Temperature: 8-10 °C.
Food pairing
The wine will be an ideal pairing with white meat dishes with vegetables, pasta, risotto, cold and hot appetizers.
