About the wine
In ancient Rome, the Rubigalie were festivals organised to ask the ancient goddess Rubigo for a blessing on the vines during the grape harvest. And it is precisely for these festive occasions that this aromatic Malvasia di Candia sparkling wine, an aromatic white wine with low alcohol content, was created.
Winemaking
Harvest in September. Classic white vinification. Long natural charmat fermentation in autoclave with selected yeasts at 18°C.
Tasting notes
At first glance, it is characterised by intense golden yellow reflections and very fine perlage. On the nose, the scents of Sicilian citrus fruits stand out, followed by a floral bouquet that heralds a drink with a bursting but never cloying sweetness well balanced by the acidity that will lead to a surprising finish given by a pleasant aftertaste of wildflower honey on the drinker’s palate.
Food pairing
A wine for the end of a meal, it goes well with shortbread biscuits and dried fruit desserts.
