Making wine
Harvest at the end of October. Gentle pressing of the grapes, maceration for 10-15 days. Fermentation in stainless steel vats at controlled temperature. Malolactic fermentation in stainless steel vats. Maturation in stainless steel barrels 6 months.
Tasting notes
The red colour of the earwax with ruby reflections. A bouquet of small berries, blackberry and plum blossom with delicate floral (pink) and vegetal notes (tea leaf), decorated with liquorice, graphite and wild memories. An impressive, elegant, austere palate, supported by polished tannins and a tangy mineral-acid note.
Food recommendation
Serve with steak and meat sauce, various types of stewed game and large cheeses.
