Bodegas Langa is currently the main winery in Calatayud and the only one with a long and uninterrupted family tradition. The winery is located in an emblematic area, considered magical throughout the human settlements that have taken place in the area. The Sierra Vicor, at the foot of which the winery is located, was a sacred place for the Celtiberians and had a prominent place in the work of the classical poet Marco Valerio Marcial.

Winemaking

Primary alcoholic fermentation takes place in stainless steel tanks at a controlled temperature of 16 °C. Malolactic fermentation is not carried out in order to preserve high acidity. The second fermentation occurs in the bottle at 15 °C. Aged in the bottle for over 9 months on its lees.

Tasting notes

Beautiful strawberry-pink colour with salmon hues. Fine, persistent bubbles forming a half-crown. The aroma is complex, with intense youthful fruit notes reminiscent of raspberry, cherry, redcurrant, and pomegranate. On the palate, it is fresh and smooth, with a very fine mousse that integrates beautifully into the complexity of the cava. The finish is elegant, serious, long and dry, expressing the honesty and character of the cava.

Food pairing

Made from 100% Garnacha grapes grown in stony and clay soils from vines over 40 years old. With its lovely pink colour and flavours recalling raspberry, cherry, redcurrant and pomegranate, it is best served very well chilled. Highly recommended on its own or as an accompaniment to quality appetisers.
