At the Allacher winery, the indispensable knowledge of tradition are combined with the modern insights of the next generation. What grows from this are great wines. The vineyards are located on about 30 hectares of the unique wine-growing region of Neusiedlersee, including the legendary vineyards Altenberg and Salzberg. The soil gives the potential. The winery provides natural, attentive care. Fresh fruity white wines, powerful dense red wines and extract-rich sweet wines are the precious result. Here happiness and glass find each other.
Winemaking
The grapes were harvested by hand and immediately selected. Only the most beautiful and best grapes were processed further. The Blaufränkisch grapes were crushed and filled into a stainless steel mash tank. After a cold maceration of 3 days, yeast was added and fermentation started. The mash was submerged 6-8 times a day. This is especially important for the Blaufränkisch variety, so that the Blaufränkisch gets its typical spiciness and the colour is leached out of the grape skins. The fermentation lasted 8 days. After fermentation, the wine remained on the mash for another 12 days. Then the Blaufränkisch was pressed and the biological acid degradation was initiated. Here, lactic acid bacteria convert the harsh malic acid into milder lactic acid and reduce the overall acidity. The wine was aged 70% in stainless steel tanks and 30% in used barriques. After 6 months, the wine was drawn together again in a stainless steel tank, filtered and then bottled.
Tasting notes
Ruby red with delicate cherry rim; clean discreet blackberry-elderberry nose, voluminous body with firm structure; ripe, soft tannins; taste of dark chocolate on the finish.
