Guardians of the heritage and know-how of their ancestors for 3 generations, Champagne Yves Jacques run the family vineyard planted with the three Champagne grape varieties in the Marne Valley, the Cote des Blancs and the Aube, in the communes of Sézanne, Baye, but also Chouilly and Ay, classified as Grand Cru. Their Champagne wines are made in Baye, in their own cellars and in accordance with the traditional method.
About the wine
This cuvée is a blend of the winery’s best Chardonnay (1/3) and Pinot Noir grapes (2/3). The fermentation and lees ageing processes (in oak barrels) add notes of vanilla and woody aromas to this wine. In order to preserve its aromatic potential, this wine is unfiltered. This means that the wine can contain some leftover particles. However, this sediment does not alter the taste of the wine, nor its exceptional qualities. This vinous and full-bodied champagne can be enjoyed as an aperitif and with all types of food.
Winemaking
Sustainable viticulture. Traditional hand picking. Fermentation in oak barrels, Wine making using ancestral method. Ageing in oak barrel, aged on laths before disgorging.
Tasting notes
Gold colour, fine perlage, golden yellow highlights. Aromatic and expressive nose with aromas of white flowers, vanilla and butter. Refined, rich and full-bodied taste, vanilla hints, smooth, structured body, long length.
Food pairing
Perfect as an aperitif, but also goes well with game, poultry and cheeses.
