Winemaking
This wine is produced with a ‘Bordeaux blend’. By ‘blending’, we mean the mixing of different wines by grape variety, while the second term indicates those grape varieties originating in the Bordeaux region of France, namely Cabernet, Merlot (as well as, in some vintages, Petit Verdot), varieties now cultivated throughout Italy, and which in Sicily, have shown splendid adaptation. Breeding in contre-espalier, with guyot pruning. 300/450 metres above sea level, with a density of 5000 to 5500 plants per hectare. Yield of 50 quintals per hectare. Fermentation in steel, ageing in steel, twenty-four months in barrique.
Tasting notes
Deep, very well-balanced, with tannins of exemplary elegance and a savoury finish that argues in favour of its favourable evolution over time. A wine of great substance and depth, elegant, unmistakable on the nose for its intense spiciness, a Bordeaux made rich but measured, not opulent; powerful but never heavy, on the contrary, flowing and juicy.Recommended serving temperature: 16°C — 20°C
Food pairing
The Caro Maestro goes well with lamb dishes, boiled meat, veal kidney, orange duck, roast game and generally with intensely flavoured meat dishes.
