At 800 meters above sea level, on the gentle hills that were once the seabed of the Mediterranean and under the shelter of the Sierra del Negrete (Utiel), a unique landscape opens up to the eye. An environment where pines, holm oaks and olive trees join the aromatic notes of thyme, rosemary and fennel that dot the valley and combine to wrap the fruit of the vineyards of the Sarrión-Martínez family, la Bobal. A strong grape that, withstanding extreme climates and apparently infertile limestone soils, cultivated through natural and pioneering processes in the area, offers a fruit full of nuances, elegant and delicate. A grape expression of the soil, the climate, the aromas of the mountains and the proximity of the sea that, together, give the wine its unique Mediterranean character.
Winemaking
Mediterranean mountain vineyard, at an altitude of 900 m. At the Calvestra estate, Requena. Merseguera grafted on old Bobal vines. Vineyards on a small plot with soils composed exclusively of marl. Vines in strict dry land with tillage. Manual harvest in boxes of 15 kg. Grape selection table de-stemmed and lightly crushed. Gentle pressing. Fermentation in 500 l barrels with native yeast. Aging for 11 months on fine lees in 500 l acacia barrels of various uses, second year of aging in a tank. Subsequent maturation in the bottle for two more years.
Tasting notes
It surprises with its aroma with notes of Mediterranean white flowers; on the palate it is creamy, fresh and very long. It is an elegant and harmonious wine.

You can take it with appetizers, salted fish, seafood, grilled fish, Mediterranean rice dishes and white meats.
