Wine runs in the veins of the Reverdy family. For four generations, the family has been inspired by the same values: a hereditary attachment to the Loire Valley, an instinctive passion for the terroirs and an innate respect for people and work. Passion, integrity and accuracy are the key words that drive the members of the estate. Today, Jean-Marie Reverdy, guided by his vocation, makes the estate prosper with his wife Catherine and his two sons, Guillaume and Baptiste. The cellars are located in the middle of the vineyards. This unique situation offers a breathtaking view of the famous Sancerre hill and its vineyards. The Centre Loire is a tourist region renowned for its wines and appreciated for its attractive landscapes.

Terroir

Rooted close to the Piton de Sancerre, this sixty year old plot on the hillside comes from a great limestone terroir and enjoys a south-east exposure. The estate is now certified as level 3 High Environmental Value (HVE). The regular working of the soil, the precise cultivation methods that respect the terroir and the plant allow the Sauvignon grape variety to deliver all the singular expression of a great Sancerre. Healthy and fragrant grapes are thus harvested, the objective being to obtain a very qualitative and controlled harvest destined for a long maturation in barrels.

Winemaking

Harvested when perfectly ripe and rigorously sorted, the grapes are carried by vibration to the press. After a gentle and slow pressing at low pressure, the juice flows by gravity into the vat for the next step called “Débourbage”. This natural cold decantation of about 12 to 16 hours allows the coarser impurities to be separated by racking. The grape juice then undergoes alcoholic fermentation at a temperature of between 15 and 20°C. In order to develop the full potential of this wine, it is aged for 12 months in barrels of 2 and 3 wines.

Tasting notes

Minerality and density are the two key words of this Sancerre Le Paradis. On the nose, one navigates between grapefruit, hawthorn, fresh herbs and white pepper. On the palate, roundness and fleshiness in the attack, then comes the tension on the saline and chalky frame which tightens and stretches the wine. A great vertical wine, with a formidable scope.

Food pairing

Purity, singularity, mastery: here is an elegant and racy Sancerre. Served between 10-12 degrees, this wine will accompany you on a scallop risotto or a blanquette of monkfish tail.
