It’s a century-old winery, and it’s the future. Its history dates back to 1821. to the year when manzanilla began to be produced. Since then, Barbadillo has not stopped developing, always looking for wines that surprise and leave their mark.
Making wine
Patinegro is a white wine made from organic grapes and aged for 12 months in oak barrels where Manzanilla was previously kept. This wine is not clarified and only lightly filtered.
This wine is named after the Kentish plover (Charadrius alexandrinus), Spanish for “Patinegro”. It’s a feisty and flighty little bird that loves the dunes of Cadiz and can fly thousands of miles to nest here. They are threatened by human activity and their pets, which disturb nest sites.
Tasting notes
Clear pale gold. Complex Mineral notes with subtle fragrances that suggest ageing in the cask. Dry, long and smooth in taste, with a soft texture and a slightly salty note.
Recommended serving temperature: 6°C — 8°C.
