Winemaking
Espalier, with Guyot training. 150/450 metres above sea level. Planting density from 4500 to 5500 plants per hectare. Harvest in the second ten days of August. Fermentation 100% in steel. Foaming 2 months in autoclave.
The base wine is obtained by low-temperature fermentation of the must resulting from the soft pressing of whole grapes. Refermentation takes place in autoclaves at a temperature of around 15°C for a period of two months.
Careful re-fermentation in the autoclave at a low temperature gives this wine a particular vivacity and freshness.
Tasting notes
Part of the grapes come from vineyards adjacent to the sea coast in front of the island of Mozia. This sparkling white wine is straw yellow in colour with greenish highlights. On the nose it has fragrant, floral and fruity scents, while on the palate it has vegetal flavours typical of the grape variety used. These characteristics encapsulate all the Sicilian character of the sea, summer breezes and Sicilian citrus fruits.
Food pairing
A young and lively wine, ideal to accompany light and tasty dishes, grilled fish, shellfish, white meat and sautéed or baked vegetables. Excellent as an aperitif. Serving temperature: 8-10°C.
