Wine runs in the veins of the Reverdy family. For four generations, the family has been inspired by the same values: a hereditary attachment to the Loire Valley, an instinctive passion for the terroirs and an innate respect for people and work. Passion, integrity and accuracy are the key words that drive the members of the estate. Today, Jean-Marie Reverdy, guided by his vocation, makes the estate prosper with his wife Catherine and his two sons, Guillaume and Baptiste. The cellars are located in the middle of the vineyards. This unique situation offers a breathtaking view of the famous Sancerre hill and its vineyards. The Centre Loire is a tourist region renowned for its wines and appreciated for its attractive landscapes.
Terroir
A white wine from the prestigious Côte de Verdigny. The south-east facing vines planted in 1979 benefit from optimal sunshine. This situation is tempered by the clay soil, which remains cooler in summer after retaining water all year round and allows for maturation under moderate water stress. The estate has been awarded level 3 HVE (High Environmental Value) certification, and the regular tilling of the soil and the precise farming methods that respect the terroir and the plant enable the Sauvignon grape variety to deliver all the singular expression of a great Sancerre. From this comes of course the perfect balance between an ideally ripe and generous fruit and a mineral and iodine freshness drawn from the terroir.
Winemaking
Harvested when perfectly ripe and rigorously sorted, the grapes are carried by vibration to the press. After a gentle and slow pressing at low pressure, the juice flows by gravity into the vat for the next step called “Débourbage”. This natural cold decantation of 12 to 16 hours allows the coarser impurities to be separated by racking. The grape juice then undergoes alcoholic fermentation at a temperature of between 15 and 20°C. In order to develop the full potential of this wine, it is aged for 12 months in 228L barrels of 2 and 3 wines.
Tasting notes
On the nose, Les Villaudes is a particularly fine and subtle wine with a delicate bouquet. The terroir gives us a wildly complex nose with notes of verbena and green apple mixed with a hint of exoticism (pineapple and grapefruit). The mouth is very fresh on the attack with a very vertical acidity which is the backbone of the wine. This is a great Sancerre which gradually reveals itself during tasting and gives way to a unique minerality.
Food pairing
The wine pairing is not trivial. A successful marriage transforms the meal into a real moment of pleasure and conviviality. Served between 10 and 12 degrees, this wine of character will accompany you during a refined dinner. Superb with langoustines, poached pike with beurre blanc or Bresse poularde with morel sauce.
