Here, Meunier (50%) is combined with Chardonnay (50%) aged in barrels of three Chardonnay wines. This time spent in wood sublimates the particularity of the village’s Chardonnay: it is round and greedy, and is said to “pinote”! A champagne aged for 9 years on laths: unique and refined.Clay-limestone and clay-sand soils. Integrated viticulture, hand-picked. 8000 kg Coquard press. Cold settling for 12 hours. Complete malolactic fermentation. Barrel-aged Chardonnay (6 months).
